Hi,
I'd like to know if it is possible to automatically display all the avatars of members of a certain level on buddypress. For example: All 'Premium' members are shown in a premium member box - positioned before the a-z member list.

This is certainly possible. It will require some custom coding, using the s2Member API Constants.
